Pumpkin Spice Latte Cake...


 Simple and delicious and a perfect fall dessert.....
I am hopelessly addicted to Starbucks Pumpkin Spice Latte.
Really I am.
When Mix and Match Mama posted her Pumpkin Spice Latte recipe, I knew I had to try it.

The recipe itself is very easy.
INGREDIENTS:
1 box of spice cake mix
2 small boxes of instant vanilla pudding
(I used two large boxes)
1/2 cup vegetable oil
1 1/4 cups of water
4 eggs
1 can of pumpkin
(again, I used a large can)
I added 2-3 tsps of pumpkin pie spice
Mix all the ingredients together and pour in a greased, or Pam'ed, bundt pan.
Bake at 350 degrees for 40-45 minutes or until a toothpick inserted comes out clean.
Let the cake in the pan rest on the counter for 10-15 minutes.
Invert your cake onto a serving plate to allow it to finish cooling.

ICING:
4 cups of powdered sugar
(I used 3 cups)
1 stick of butter softened
3-4 splashes of milk
(I used about 1/8 cup of milk)
2 Tablespoons of cinnamon
Mix with an electric mixer until creamy.
Frost your cooled cake.
This cake was so delicious, not to mention my house smelled soooo good!
My husband is not a big "sweet" guy and certainly doesn't care for pumpkin....
he had more than a few slices.
There was not one single slice left by the next evening.
That's how I know I made a great dessert!
