Easy Pizza Roll Recipe

My sister posted Pizza Rolls that she made on Facebook. They looked sooooo good, so I decided to try it as well.
All you need are a few ingredients...
*canned biscuits
*pepperoni
*block cheese
*italian seasoning
*garlic powder
*parmesan cheese
* 1 egg
1.) First flatten each biscuit into a circle. We used the large biscuits, but you can also use the small ones.
2.) Place 3-4 slices of pepperoni into each flattened biscuit.




3.) Cut a slice of the block cheese and place on top of pepperoni. We used Colby Jack cheese.




4.) Top with 3-4 more slices of pepperoni and fold biscuit sides over to seal.




5.) Once all biscuits are filled and rolled, brush the tops with a beaten egg.




6.) Once all pieces have been brushed with the egg, sprinkle Parmesan cheese, garlic powder and Italian seasoning on top.




7.) Bake according to package instructions.




These pizza rolls couldn't be easier to make.




And again, they are so versatile...you could add olives, onions or go with spinach, chicken and a white cheese instead. There are so many ways you could make these.




The pizza rolls were a hit with my family. I'm sure we'll be making many, many more!

Pumpkin Spice Latte Cake...


 Simple and delicious and a perfect fall dessert.....
I am hopelessly addicted to Starbucks Pumpkin Spice Latte.
Really I am.
When Mix and Match Mama posted her Pumpkin Spice Latte recipe, I knew I had to try it.

The recipe itself is very easy.
INGREDIENTS:
1 box of spice cake mix
2 small boxes of instant vanilla pudding
(I used two large boxes)
1/2 cup vegetable oil
1 1/4 cups of water
4 eggs
1 can of pumpkin
(again, I used a large can)
I added 2-3 tsps of pumpkin pie spice
Mix all the ingredients together and pour in a greased, or Pam'ed, bundt pan.
Bake at 350 degrees for 40-45 minutes or until a toothpick inserted comes out clean.
Let the cake in the pan rest on the counter for 10-15 minutes.
Invert your cake onto a serving plate to allow it to finish cooling.

ICING:
4 cups of powdered sugar
(I used 3 cups)
1 stick of butter softened
3-4 splashes of milk
(I used about 1/8 cup of milk)
2 Tablespoons of cinnamon
Mix with an electric mixer until creamy.
Frost your cooled cake.
This cake was so delicious, not to mention my house smelled soooo good!
My husband is not a big "sweet" guy and certainly doesn't care for pumpkin....
he had more than a few slices.
There was not one single slice left by the next evening.
That's how I know I made a great dessert!

Tiramisu Brownies

This week at Kellys Korner she is showcasing desserts. This is by far one of my most favorite recipes... Tiramisu Brownies.


I first made this for a Girls Night In and it was a success. I did make a few minor changes this time and I think it turned out better, but I will be listing just the regular recipe and notate my changes by the pictures. And there are many pics after the recipe...so scroll down!


The recipe:

12 squares (1oz each) semisweet chocolate
1 cup butter softened
*******
1 1/3 cups plus 1/4 cup sugar divided
*******
8 eggs
*******
1 cup cake flour
1/4 cup instant coffee granules or espresso powder
*******
2 cartons Mascarpone cheese
2 teaspoons vanilla extract
*******
1 teaspoon baking cocoa


In a large microwave-safe mixing bowl, melt chocolate. Stir until smooth; cool slightly. Beat in butter. Gradually beat in 1-1/3 cups sugar. Add six eggs, one at a time, beating well after each addition.Combine the flour and instant coffee granules; add to the chocolate mixture. Beat on low speed just untill combined; set aside.

For filling, in a small bowl, beat the cheese, vanilla, and remaining sugar and eggs until smooth.

Pour 4 cups of chocolate batter into a greased 13-in. X 9-in. X 2-in. baking pan. Spread with the filling. Top with the remaining batter, spreading evenly to completely cover filling.Bake at 350 degrees for 45-50 minutes or until center is almost set and brownies begin to pull away from the sides of pan. Cool on a wire rack. Dust with cocoa. Cut into squares. Store in the refigerator. Makes 3 dozen.


12 1-oz squares of semi-sweet chocolate

beat in one at a time

even the girls got in on the fun

they love to cook
this is the rest of the sugar and instant coffee.. (I added 1/2 cup instant coffee instead of 1/4)
pouring the flour mixture into the chocolate batter

we were supposed to me mixing with the mixer but I forgot and they turned out just fine

the mascarpone cheese

the cheese, other 2 eggs, vanilla (here I put 3 tsp and 3/4 cups of sugar)

I remembered my mixer....

spreading the 4 cups of chocolate batter into my pan (see how loved my pan is?)

the cheese mixture going on top

spread evenly over

the remaining chocolate batter over the filling

out of the oven and dusted with cocoa

ready to eat
These are so easy to make and so very delicious. I found this recipe in the Christmas dessert section of one of my cookbooks. I think it fits the holidays just perfectly! You will be sure to get many, many compliments.
I took some to work today and it was a huge hit! Everyone loved them and kept coming up to me to tell me how good they are. When I came home there were only about ten brownies left!
I use a slightly larger pan to bake them in because I like them a little thinner.

Started off Bad... (updated w/ photos)

This weekend has been good. Saturday we wanted to get Mom out of the house and try to cheer her up. We went to Barnes and Noble, looked at books and drank Java Chip Frapps and just had a good time. Then the girls and I went over to Ross and found some really good deals. I bought two dresses (really needed them for church), two pairs of shoes, CC a pair of shoes, Lena some pants, shoes and really cute shirt for school, then Emil and I large pillows for our shams. So..... it came out to a very, tad bit over $100. Not too bad!! We then looked around more store and bought groceries. Lisa wanted to go see the Orphan but my feet hurt so bad I just wanted to go home. Ok... good day!

Sunday..... morning was nice. I woke up early because Charlie was crying and crying and forced me out of bed at 7:30. I hate waking up so early on the weekends because I have to wake up so early during the week. I put on some of my shows I had on the DVR... Homes Across America and If Walls Could Talk..... I fell back asleep on the couch. Then Emil joined me for a little nap. Next thing you know we hear a glass knocked over on the table. Charlie! He doesn't like to drink out of a bowl, only cups or glasses or a running faucet. Soooo.... I knew there had to be water in the glass. I jumped up and told Emil "There might have been water in there!" Why the problem? Our laptop live on the kitchen table. Sure enough. He knocked it over on Lenas laptop. Emil jumped up, grabbed the laptop, turned it on its side and the water just poured out. Needless to say, the laptop never turned back on. Lena woke up and was in tears. I was pretty upset. Emil was mad at Charlie. He knew that he did something wrong because he hasn't come into the kitchen area at all today except to eat. I wanted to get the day back to normal to try and calm everyone down so I made potatoes, scrambled eggs and Jimmy Dean breakfast sausage patties. We got ready for church.... enjoyed a beautiful talk. Then... we went laptop/pc shopping. The "/" because I didn't know which one I was going for. We ended up with a really good deal. A dell laptop... 3GB for under $400. Nice. I haven't had the chance to try it out yet. Emil and Sierra have been breaking it in.

I just made another wonderful batch of brownies. Mom accused me of using a mix. I wanted to make them, infront of her, from scratch but she didn't come over in time. Mom... 100% homemade. I will post the recipe for those as well... tomorrow. I have to wake up at 4:45 tomorrow morning and need to go to bed.

Debbie and I went in to talk to Iz about the crazy schedules Dorothy has been giving us. I am so nervous what I will get tomorrow. I will pray about it and see. I can't do anything right now so there is no point to sit here and worry about it.

Interesting

I have no pics today. I don't really feel like fighting with this and posting.. but I don't have any to post anyway.

Today was a pretty good day. I only worked four hours... went in at six and off at ten. I felt like I pretty much had the day off. It was so nice. HOWEVER.... I fell asleep on the couch with Emil around seven and woke up after eight. Not a good idea. I hope I still sleep well tonight.

We made tarragon chicken breasts, brown basalmic rice and Emils Korean cabbage salad. Delicious!! I am posting the recipe for the salad later on. I need Emil to translate the exact measurements for me. He found this Korean recipe on his Russian website... Imagaine That!!

I just put a batch of brownies in the oven. Sierra usually makes brownies but she's been kinda grumpy about it lately so I did it on my own. And the batter tastes pretty good!

While mixing the brownies I was listening to the channel Emil had on. I heard the most interesting thing I've heard in a long while. The chef was talking about figs. Emil always told me about the fig trees all around him growing up in Armenia. Anyway, the chef was saying that wasps have something to do with the pollination of figs. He said there are over 900 different varieties of figs and over 900 different types of wasps. If one species of wasps became extinct, the particular type of fig they pollinate would become extinct as well. Imagine That!! How very, very interesting!!

Ok... just wanted to add that here before I forget... I am on my tenth post now. Wow! I feel so proud. And they are coming not months apart! There is hope for me yet!

Going Back

This past Saturday I had to go visit someone in the Alamo Heights area of town and started telling the girls about my first date with their dad. I had never been on a one-on-one date with anyone since we had moved to San Antonio. I was 17. All my previous dates had been with groups of people so this was new for me. I was scared. Dumb, yes I know. As soon as I got in the car with Emil he took a left down the street by our apts. I had never been down that street in the ... ohhh... the three years we lived there. I knew the streets I needed to go down to get to school and the store and that was good enough for me. So we turn left down the street next to our apts and there is a highway to our right. Who would have thought... I certainly didn't know. Now I was scared. I was thinking.. oh my gosh.. I have no idea where we are.. he's taking me on this highway... he's gonna kill me! My heart was pounding.. he was listening to this crazy heavy metal music... I didn't know what I had gotten myself into. I was just thinking... I hope I told my mom I loved her before I left. Dramatic, yes.... but it was so out of my comfort zone I didn't know how to react. He wouldn't tell me where he was taking me... which made it worse. I saw high highways and tree tops... I saw signs for the zoo... WHAT WAS GOING ON?? Then we pulled into the the Japanese Tea Gardens... or Chinese Tea Gardens..depending on which sign you look at there. It was absolutely beautiful. Lush green plants and cherry blossom trees.. huge goldfish swimming in the ponds... stone bridges and stairs.. a waterfall... it was beautiful. We walked up a little hill and over a wooden bridge to a gazebo. We stood there and talked... another couple was there as well. When they left he kissed me. It was our first kiss. Oh man.. it still makes me smile thinking about it. And we kissed and kissed and kissed some more. So I decided that I would take the girls there to see where our family started.. where it all began. Well, smart me was thinking... we've had weeks of temperatures over 100 degree. So here we are... with our Sonic half price happy hour drinks.... going to the Tea Gardens. As soon as we stepped out of the car I think we knew the mistake we made... but we did it. For about 20 mins.

Sunday morning I got up early and made banana bread for Emil. He had been begging me to make some, so I thought I'd get up early and make it.

And the after. Ignore the wine. That was for the beef and mushrooms Emil and I made the night before..

I like the recipe for banana bread from my Betty Crocker cookbook. It turns out so moist. I like to add extra vanilla.. and I mean extra... and extra sugar and nuts, both pecans and walnuts. I also sprinkle a little extra sugar on top once it's in the loaf pan.



I still need to post pics of my weekend with my nephews. You would think by all the pics on this posting that I got the hang of pictures.. it's getting better but not at all easy. This posting took me two laptops, two hours and two drafts.. but I'm getting there.
