Breakfast Pizza - Rednesday!

It's Rednesday over at Sue Loves Cherries!



I haven't had time to participate lately...and I honestly should be doing homework (gotta love nursing school!) but I wanted to share today a favorite breakfast item at my home...

Breakfast Pizza.....

We seem to get in a breakfast rut sometimes and it's always fun to switch it up. When I was still in school my mother and I would stop at the grocery store's deliand have a slice before she dropped me off.

They used refried beans, eggs, bacon and cheese...

I usually use.....

fresh tomatoes and fresh, sliced mushrooms.


I scramble my eggs...


And lately we have been using Italian sausage instead of bacon.


I've been lazy lately (or is it too overworked and over schooled?) and havebeen using premade pizza crusts. I do have a really simple recipe for

old world pizza dough here, just no time to prepare it!

I also quarter them before baking. It's just much easier that way.
I sprinkle shredded cheese over the bottom just to help the eggs stick.


Next I add my Italian sausage...


Add a little more shredded cheese and then tomatoes...



A bit more cheese over the tomatoes...



And then add the fresh, sliced mushrooms. Sometimes we add in olives too.



Top with more shredded Italian cheese...



Then bake at 350 about 10 minutes or until the cheese melts.




And finally...enjoy!

What a clever idea to cut the pieces before you put the other ingredients on your pizza! And I'm with you - I used to make my own pizza dough but now I love Bobboli's :) Hmmm, that does bring make sweet family memories of when my own kids were young, we were home schooling, and I made my own bread, pizza, and cinnamon rolls. Delightful - thank you for a lovely Rednesday post :)

I have never had pizza for breakfast and most likely never will. I am from the country. I used to eat a lot of biscuits and gravy with bacon. Now, I just eat cereal and have coffee. Maybe it is the thing in San Antonio. I love that place.
